Made in exactly the same way as the 2022, the 2021 Ventoux Il Etait Une Fois is the first vintage to utilize a portion of amphorae for aging the Grenache. Scents of cola, black cherries and almost root-beer-like spice mark the nose, while the palate is full-bodied, plush and supple, with bright acids on the finish. It's 80% Grenache (from vines planted in 1933), plus 10% each Mourvèdre and Syrah. The accompanying reviews are a compilation of notes taken over the past couple of years during visits to the estate. Proprietor Sebastien Vincenti is a thoughtful, conscientious vigneron who was proud to explain that the estate has been certified organic beginning with the 2022 vintage. Speaking of the last few vintages, Vincenti says, "For the consumer, I think 2020 and 2022 are very good—it's possible to drink [them] over a long period of time. Twenty-one is maybe better to drink earlier. I see consistent differences across the cuvées, with the difference being in the tannins." Proponents of natural wines—or, equally, those not normally inclined to drink them—may want to check out Fondreche's Nature bottling, which uses indigenous yeasts, eschews sulfite additions and is bottled unfiltered if the microbiology allows for it. It's a charming, slurpable red that's just fun to drink. Vincenti is one of the top producers in the Ventoux and a proud partisan for the region, with enough volume to ensure decent availability in many markets. The wines are worth seeking out.

Domaine de Fondrèche ligt aan de voet van de Mont Ventoux, vlak bij Carpentras, en geldt als een van de referenties van de Ventoux-appellatie. Het domein omvat veertig hectare wijngaarden, verdeeld over verschillende terroirs met elk hun eigen karakter en bestemming. Het historische plateau van Fondrèche, met zijn stenige bodems vol galets roulés, vuursteen en kalk, is vooral bestemd voor rode wijnen met diepgang en minerale structuur. Constante luchtstromen en grote temperatuurverschillen tussen dag en nacht zorgen hier voor frisheid, spanning en elegantie. De zand- en slibbodems lenen zich perfect voor verfijnde rosés, terwijl de kalkrijke percelen frisse, precieze witte wijnen voortbrengen. De combinatie van unieke bodems, hoogte en klimaat resulteert in pure, energieke wijnen met veel finesse, opvallende fraîcheur en mooi geïntegreerde alcoholpercentages.
